    It was suggested that we maintain a list of gluten-free ingredients for easy reference both for gluten-free/wheat-free chefs and for those wishing to check if their recipes could be posted in the gluten-free dietary category.

    I thought it would be better to focus on foods that are gluten-free and not include brand names. There are so many different brands for each country/state depending on what is available in your area.

    Many foods are naturally gluten-free, such as
    -all fruits, vegetables, herbs
    -all poultry, meats, seafood, crustaceans, game meats
    -unflavoured tofu
    -cows and goats milk
    -nuts, beans, seeds, and pulses

    The following list will be a work in progress. Please feel free to post a reply thread to add any amendments, suggestions or comments. I'll keep the list updated

    1) Cellulose is a carbohydrate polymer of D-glucose. It is the structural material of plants, such as wood in trees. It contains no gluten protein.
    2) Methyl cellulose is a chemically modified form of cellulose that makes a good substitute for gluten in rice-based breads, etc.
    3) Recent research indicates that oats may be safe for people on gluten-free diets, although many people may also have an additional, unrelated intolerance to them. Cross contamination with wheat is also a factor that you need to consider before choosing to include oats in your diet
