 looking for a recipe that incorporates sardines in tomato sauce for a South American blind basket final exam. Any ideas or suggestions?

Thank you! Yes, I think I can play with the Picadillo recipe. May trying to puree the canned sardines/tomatoe sauce and use some type of beef, do some type of braised dish.

OK, I give up, what's a "South American blind basket final exam"?
Sardines in tomato sauce came up a lot this summer when I was doing the Portugal/Spain segment of ZWT, so I would definitely believe some of that influence made it to south america. I ended up not making any of them, and I'm blanking on the name, but basically olive oil, pimentos, etc, and some with raisins/currents and pine nuts.

Spain had a huge influence on Peruvian Cusine, which is a growing trend in upscale restaurants-I look forward to seeing what the Popular Chefs come up with. I have no idea what a Blind Basket Final Exam is, I'm guessing it's a "here's your ingredients, good luck"

Thanks, DI. I just discovered the Caribbean Forum and am printing off recipes. My dinner group meets at my house in 2 weeks and I think we will be doing a Caribbean theme dinner!!
