In North Africa, there's also Sudan, Mauritania, Eritrea, Djibouti, Comoros and the Western Sahara, in addition to the islands of Ceuta and Melilla. The Canary Islands and Portuguese Madeira Islands are also sometimes included in the North African region.

In the Greater Middle East, there's also Gaza, Northern Cyprus, Kurdistan, Israel, Afghanistan, Armenia, Azerbaijian, Georgia, Kazakhstan, Kyrgyzstan, Tajikistan, Pakistan, Turkmenistan and Uzbekistan.

It seems reasonable to include Israel in the Middle East since it's such a huge historic melting pot of cultures, and not just Jewish/Kosher. Currently, people of Arabic descent form the second-largest population in Israel. All Abrahamic religions including Judaism, Christianity, Islam and the Bahá'í Faith have long traditions there. Perhaps you could list it and exclude Jewish/Kosher (with a link to the other forum) so that the country's other culinary traditions could be recognized.
