    Searching for a recipe for Iraqi 'koozi sham' ??

    Semi-Experienced "Sous Chef" Poster
    Well here's a long shot - does anyone out there know of a recipe or close approximation? In the newspaper article it is described as; flattening a lump of pizza dough, moulding it into an oiled bowl, pile in the precooked mix of rice, vermicelli and chunks of lamb or chicken. The closest comparison of spices in it is to biryani spices.. The picture looks so good so just thought I'd give the Zaarian Community a try Oh oops- and then the whole football looking thing is put in a deep fryer to finish it off.... icon_smile.gif icon_lol.gif

    I searched the web and couldnt find any recipe like the one you described. There is a chef on zaar that might be able to help you, her name is chef nawal, she is Iraqi. Perhaps you could zaar mail her and ask her. I wanted to respond so that you would know that your quest wasnt ignored here. Good luck!
