    Wedding Cake Blues

    I don't think I will ever find someone to make my wedding cake! It needs to be GF and CF. I have found a lady who will make it if I fly her from the east coast to New Mexico and put her up in a hotel. $$$$$$!!!!!!!

    I have called caterers and bakers and know one will get back to me!!!!

    Any ideas???

    However, you might have better luck just calling different wedding cake makers locally and seeing who would be willing to make a cake for you. You might find some of them have experience baking for people with food allergies

    I made my GF wedding cake, which I realize isn't what you want to do. However, instead of looking for a GF recipe, I used a flourless cake recipe. Flourless cakes tend to fall in the middle when they cool, but I just leveled the rim and used a thick layer of whipped cream frosting and some kind of sheet icing that I forget the name of. It was only one tier, but two layers.

    You might ask around to your local bakeries if they could make a flourless cake. Alternatively, maybe you could find a bakery that will decorate a GF cake that you provide.

    this is the best GF website on the net,go to the links page for a cake. I found one but they only ship within NYC, but if you call them you might be able to work something out.
