    Have you used Maftoul couscous?

    I just purchased some Maftoul, the large couscous. I made a small portion and it was delicious. I refrigerated the rest, however, it all stuck together and I think I might have had too much liquid left. icon_sad.gif
    Any suggestions or recipes would be appreciated.

    meftoul and couscous are not the same...
    meftoul is steamed over a chicken broth, but usually chick peas and sometimes tomatoes are added. Personally I dont like couscous...I love maftoul.
    Maftoul to me is like mini bread balls. Check this website for a recipe on how to prepare maftoul.
    The only time I have ever had maftoul has been homemade from scratch not the box...and that needs a acheived skill and time because all those balls are hand formed.

    Thank you FiFi, this is the brand that I purchased. Actually, the box label reads, ZIYAD MAFTOUL Middle Eastern Couscous and the directions on the box does not steam it. I will go back to the site and see if I can find more recipes but it won't come up for me right now. Perhaps there will be less chance of it sticking together by steaming it.
