Helpful Tips before you begin: 1. It reminds me what I have in the freezer. 2. I know what to pull out to defrost the night before 3. It prevents me from eating out because I know I have something on the menu at home. Alternatively, you could keep a running list on your fridge/freezer and check off items as you use them. On the Menu: *Freezer Microwave Rice *Asian Pork Tenderloin *Pizza Bagel Bites (oamc) *Easy Lasagna Rolls *Crockpot Cola Barbecue Pork Roast *Breakfast Bagel Sandwiches (Oamc) *Vicki's Gourmet Potatoes *Chicken Thighs With Lime and Honey (oamc) *Make-Ahead Chimichangas *Lil' Cheddar Meat Loaves *Perogy Lasagne (OAMC) *Crockpot Honey Ham (OAMC) INSTRUCTIONS: You will need: 1 large rigid freezer container ex: gladware 13-15 Large Ziploc bags 1 9x9 baking pan 1 (2quart) casserole dish, preferably with a lid Saran wrap Wax paper 2 (9x13) baking pans 2 large cookie sheets for flash freezing 2 large pots potato masher Appliances: Microwave Crockpot A Food Processor will speed up cheese grating and chopping, but I don’t have one PREP WORK LIST Sometime before your Big Cooking Day, finish these tasks: **TIP** placing prepped items in Ziploc bags will cut down on dishes you’ll need to wash. Make sure to label the bag with the ingredient, amount, and recipe it will be used for! Then on the Big Cooking day, you can just dump the pre-measured ingredients in with the rest of the ingredients! *Dice 2 cups mozzarella cheese and dice 1 cup pepperoni for Pizza Bagel Bites (oamc). *Grate 3 cups mozzarella cheese for Easy Lasagna Rolls. *Grate 4 1/2 cups cheddar cheese. 1 cup cheddar cheese for Vicki's Gourmet Potatoes 2 1/2 cheddar cheese for Perogy Lasagne (OAMC) and 1 cup cheddar cheese for Lil' Cheddar Meat Loaves * Cut cheese as directed in Make-Ahead Chimichangas *Cook 16 slices bacon. I like to do this on my pampered chef baking pan so that it cooks into picture perfect strips. 12 strips for breakfast bagels and 4 for Perogy Lasagne (OAMC). Additional bacon from the pack may be cooked the same way and placed on paper towels to drain and then frozen in a single layer in Ziploc bag—perfect for sandwiches, burgers, or fried rice. *slice 32 mini bagels in half for Breakfast Bagel Sandwiches (Oamc) and Pizza Bagel Bites (oamc). Before cooking day, streamline your counters. Remove everything from kitchen counters except a cutting board, and the appliances you will need. You can even plug in your crockpot in other room if you need the space. Big Cooking Day Drain potatoes and return to pot and mash. Reserve 2 ½ cups of mashed potatoes for Perogy Lasagne (OAMC). The add rest of ingredients for Vicki's Gourmet Potatoes to pot. Whip to combine and then transfer to 2 quart casserole dish. Cool completely, cover, label and freeze. Is a vegetarian plan available? We aren't strict vegetarians, but we keep red meat to a minimum and don't use ground meat at all (health reasons).
I probably will start out with a 2 week plan to see how well we do, but this sounds like a wonderful way to keep from eating out! I cook from scratch, and sometimes am just too tired to put a meal together when I get home. The recipes sound scrumptious and I really am looking forward to participating. I'm sure Pamela could find a good plan to put together for you for Vegetarian! You might check out these recipes in the mean time:

I'll try to work on a vegetarian one for my next plan. Unfortunately it won't be for awhile. I am a student and it takes so long to work out a plan when i should be working on essays! I promise it will be the next plan that I work on.
I am really so excited about finding this website and this forum. I need to cut down on expenses and I know that we spend WAY too much on food each month. We eat out just because I have not done planning for meals. I don't have anything to share just yet but I am pouring over this forum and getting so excited about stocking my freezer so that we can eat at home, which means not only saving money but eating better.

This is perfect! I am going to be moving in a couple weeks and it is so hard to cook and keep the kitchen clean while packing. I am so glad I found this. The first plan plus a couple extra items will be just the right amount of meals to get us through packing here and hopefully the fist couple days in our new home! Thank you!
