WOW! These all sound and look amazing! I have to try them ASAP! Im always a little wary cooking with cream though as Im not sure if it sits well with me...well all I can do is try it I guess!!!

At the risk of blowing my own horn, my favorite recipe of all time is the " Roasted Chicken Cacciatore"that I cobbled together. It's a WONDERFUL recipe for using up tomatoes from the garden too, and I serve it with a minimal amount of whole wheat pasta, so it's healthy too (the amount of olive oil is extremely flexible so the fat and calories can be reduced easily). Even my 'I don't like chicken with pasta sauce' husband swears it's his favorite pasta recipe now.

I crave for Italian Risottos, Pizzas, Pastas. But as I am not a good cook, the way I find a way to satisfy my appetite is Italian restaurants which offer the authentic taste in the perfect Italian ambiance.
But looking at so many Italian recipes, I am thinking of trying one.

well i have just joined so haven't looked at all the recipes but i have lived in Italy nearly all my life so this is an easy one:
pasta with fresh tomatoes,
J. O.'s version of carbonara,(less egg more cougettes...) much nicer than the italian original, well...its my own humble opinion..but don't tell my (italian) boyfriend,

I've tried the recipe as is, and it is delicious. I tweeked it a bit, by adding 1 can of cream of mushroom soup one time, and another time by adding about 1 cup of sour cream to your basic recipe . It also came out delicious. However, the sour cream does add a bit of fat content to the recipe, but it seems to give it a bolder & brighter taste. Another thing I tried was adding 1 small bottle of 7-up to your basic recipe ...... that definitely added a "zip" to the taste, even though the carbonation disappeared with the cooking. I'm never afraid to take an already-good recipe & push the limit. It adds zest to life, don't you think?
Thanks for the original recipe. I keep it in my cookbook, and use it as a building-block.

I've never been one to follow recipies that well, but my friend is from italy so I have been able to pick up a pointer or 10.
My favorite that she taught me to make is a Crab and Mussel mixture in Cream sauce over penne. You don't have to add a bunch of seasoning to the seafood and for the sauce just sautee some garlic in EVOO, a pat of butter to smooth it out a bit, add ~1/2 cup crab and 1 can Mussels, add lemon juice lightly (or to taste) and then mix in about 1/2 cup to 3/4 cup of cream, let it reduce for about 4 min on med and sprinkle in parmesean cheese and 2 tbsp of fresh cilantro . Stir sauce and then add penne to skillet. Toss penne in sauce and serve.
This mixture can coat about 4 cups of cooked penne well. For more heat add some crushed red peppers when serving.
My boyfriend is not a fan of spice but loves the cilantro in this dish because it's gives it the right amount of flavor with the lemon juice.
