    I recently made a GF shortbread cookie and in the oven they all melted to gether. It also was too sweet for a shortbread cookie. icon_cry.gif

    These are the best shortbread cookies i ever tasted:Uncle Bill's Whipped Shortbread Cookies recipe #46877
    (i think alot of people who tried them agreed to becuase look at the rating!)

    Yes, his is super. I have his recipe in my ckbk. However, I'm looking for Gluten Free cookie. Sorry, I thought everyone knew what GF meant. icon_redface.gif

    Nana, if you can, give Uncle Bills' recipe a try some time, they are just fantastic, and I make them all the time!

    nana my sister has to cook gluten free and she has a magazine that has some recipes i cant vouch for how good the recipes are though i can post them for you there is a biscotti and gingersnap, mocha crinkles
    pinwheel cookies, florentines ,lemon crisp my sis buys things already made but like i said i can post those dee the flour mix is 1 cup fine brown rice flour
    1 cup fine white rice flour
    2/3 potato starch flour
    1/3 cup tapioca starch

    dienia, any of these would be appreciated. I think the lemon cookies would be nice and the pinwheels. Those 2 would be enough. The flour mix looks good also. Thank you for the help.

    gluten free lemon crisps
    1 1/2 cups the mixx
    1/4 cup sorghum flour
    1/4 cup almond flour
    1/2 teaspoon xanthan gum
    1 teaspoon baking powder
    1/8 teaspoon salt
    1/2 cup butter
    1 cup sugar
    1 teaspoon finely grated lemon rind
    1 teaspoon vanilla
    2 eggs
    sugar
    mix together dry ingredients
    cream butter and sugar add lemon rind vanilla and eggs 1 at time beat until well mixed
    stir in dry ingredients chill at least 1 hour
    overnight is better
    preheat oven to 350 degrees line a cookie sheet with parchment paper
    measure 1 tablespoon of dough and roll in sugar
    arrange sugar balls at least2 inches apart bake in middle rack for 10 12 minutes or until edges are brown and center is goldenwhen complely cooled drizzle with lemon glaze
    lemon glaze
    3 cups powdered sugar
    1 tablespoon milk
    1 tablespoon melted butter
    2 tablespoon lemon juice
    whisk all ingredients together until smooth

    gluten free dairy free pin wheels
    2 14 cups flour mix
    1/2 teaspoon xanthan gum
    1/2 teaspoon baking soda
    1 1/2 sticks unsalted margerine
    8 ozs non dairy cream cheese
    1 cup sugar
    2 teaspoons vanilla
    4 ozs non dairy dark chocolate,melted
    mixdry ingredients together
    cream margerine and cream cheese toghter add sugar and vanilla and continue beating
    stir in flour mixture
    frig for 1 hour
    divide dough in 1/2 mix melted choclate into 1 dough then divide doughs in half again 4
    between 2 pieces of floured parchment paper roll white dough into rectangle
    qbout 10 by 9 inches
    roll choclate out same way
    place the choclate on top of white piece and press together tightly roll out dough to form a log
    repeat with remaining dough
    wrap and refrigerate at least 1 hour
    preheat oven 350 degrees cut dough into 1/4 inch slices
    place on ungreased cookie sheet
    bake 1012v minutes tol golden

    hope these are what you are lookig for ive never worked with gluten free flours before as a matter of fact i add gluten to my bread dough lol dee

    I used to cook GF and often enjoyed three ingredient peanut butter cookies for a treat. Peanut butter, egg and sugar. I added coconut or choc chips for a change as well.
