    Canned Oysters

    Mom gave me two 8-oz cans of oysters. These are the non-refrigerated cans (found w/ the cans of tuna).

    What can I make with them?
    Are they the same size as fresh?

    Blend up some cream cheese, the drained oysters, some parsley and a few pinenuts (oir walnuts) makes an awesome spread.

    Personally I eat them straight out of the can though.

    I'd really rather make a soup or casserole....could I usse them like fresh?

    I don't think so. They have a really strong smoked flavour.

    If they're like the oysters in a can I buy, they're great for pan-fried oysters like you get at seafood restaurants. I just drain the can, make a little egg-milk mixture, dip them in that and roll in seasoned cornmeal. Fry them in plenty of oil at about 350-375 degrees and drain them on a paper towel.

    There's a restaurant in Louisville, KY that is well-known for serving these. Their oysters are HUGE! and expensive. Give these little babies a try. You can dip them in tarter sauce, cocktail sauce, or ketchup.

    I'm sorry. I misinterpreted you. We don't get canned oysters here that aren't smoked.

    This is from River Roads Cookbook
    2 dozen oysters with liquor
    6 small green onion, chopped fine
    1 rib celery, chopped fine
    few sprigs parsley, minced
    1 qt milk
    1 stick of butter or oleo
    salt and pepper
    Worcestershire sauce
    8 rolled crackers (optional)

    Strain oyster liquor and save. Pick oysters for shells. Cook chopped vegetables and oysters in oyster liquor until oysters are plump and edges begin to curl. Do not overcook. While oysters are cooking, simmer one qt milk and stick of butter in saucepan. Do not boil. Add oyster mixture to milk and butter. Simmer a few minutes. Add salt, pepper and Worcestershire sauce to taste. Before serving, add rolled crackers. Serves 4.
