I serve smoked salmon and sour cream with potato pancakes as a meal. A salad on the side.

    The Lower-Renish version

Take a slices of a very dark rye bread and spread it thickly with sugar beet molasses (I think you could sub it by your favorite syrup) and place the potato pancakes on it. Serve it with apple puree. You will see, you will turn everyone into a potato pan cake lover icon_biggrin.gif

Sugar beet molasses is malty in taste and goes well together with dark rye bread. And its sweetness completes potato pancakes so well.

...but you will see people in the lower-renish region of Germany love dark ry bread and sugar beet molasses. They will combine it with everything icon_biggrin.gif

Dear Noramarie, when my German grandmother makes kartoffelpuffer we have it with unsweetened apple puree home made from tart green apples. My German mother in law serves them salted with a green lettuce salad with a tart dressing made with lemon juice instead of vinegar. We never have potato pancakes with meat. We have them as a vegetarian meal, when we want a change from meat. Hope this is usefull to you. best wishes.

Applesauce and powdered sugar. The salad with lemon dressing sounds good to. No meat, though.
