    fish marinade ?

    I have some halibut and a can of coconut milk ~~~~ do you think I could marinade the fish for a bit then bake?? I have never used coconut milk before and am wondering if it would be ok, also I could add some to the water when I make white rice???? HELP!!!

    That should turn out nicely! Try adding some curry powder, minced ginger, and a small amount of light soy sauce to the marinade also.
    Baste with some of the mixture when cooking.
    But reserve a portion before you marinate the fish and cook your rice and then stir this into the finished rice (not too much of it, now) and fluff it up with a fork. It might be a bit wet, but should be tasty. Adjust the seasonings (salt, etc.) to your taste. icon_smile.gif
