    Mediterranean or Greek Salad?????

    My hubby wants me to make a salad like what they sell in a lot of deli cases. It has tomatoes, chunks of mozzarella cheese, and black olives in it. I'm assuming it is in olive oil and there are obviously spices but I'm not sure what. Is there a special name I should do a search on? I tried Tomato & Mozzarella Salad, since that is what our deli calls it, but none of the ones I looked at had black olives too. Can anyone point me in the right direction??

    Even though this recipe has the right ingredients, what I am looking for is a cold, marinated salad so I don't think it is right. icon_sad.gif I appreciate you posting though as this sounds good too! icon_smile.gif

    Sounds like an antipasto salad. But with pasta, and without the meat! icon_wink.gif

    All the ones I've seen don't have pasta or meat in them. Just tomatoes, mozzarella balls/chunks, black olives and sometimes artichoke hearts I think. I figured it was common since all our delis carry it. I'm surprised I can't find a recipe. icon_sad.gif

    I don't have a 'recipe' but we make this alot...sometines with bocconcini (little mozzarella balls) sometimes with crumbled feta

    dice up some nice ripe tomatoes
    add some diced green peppers and diced seeded cucumbers, as well as pitted Kalamata olives. toss in the cheese (we also sometimes use pepperoncini, as well, those small marinated hot peppers you get at the deli or in a jar)

    toss with red wine (or lemon juice) and a good green olive oil, cracked black pepper and fresh or dried oregano.

    (you can also add a touch of fresh or dried mint, to give it a real Greek flavor)

    As I said, I have no set recipe for this, it all depends on how much of anything I have in the fridge at the time I make it.

    There is a Greek Tomato Salad, #26076, posted by Sue L that looks like it may be what you are looking for. I saved it to my Carb Friendly cookbook and plan to try it soon. icon_biggrin.gif
