I have collected a few in my Tastes Like Chicken cookbook, and here are three of them that sound the best to me:

Vietnamese Chicken Salad by Mean Chef

Thai Citrus Chicken Salad by Carla

Chicken & Couscous Salad by DeSouter

And of course you can always just put cooked chicken on a green salad, with any kind of dressing you want. I do this a lot for lunches in the summertime.

I've subbed 1 cup nonfat plain yogurt plus 1 t dijon mustard per 1 cup of mayo in chicken salad, and it came out great! I got that from ShirlJ in the Low Fat Cooking forum.
