    great information about summer vegetables available now

    Someone had suggested adding vinegar to the water, while boiling potatoes, to keep them from falling apart, on another board. I am posting the information that I found on the Hormel site and hope you enjoy checking the site out. It has a complete list of all the fresh vegetables we are all enjoying right now.

    Potato tips:

    Prevent the darkening of a just peeled potato by cooking it immediately or placing it in cold water until ready to use.
    To prevent a peeled potato from falling apart during cooking, soak in cold salt water for 10-15 minutes prior to cooking.
    Add a little lemon juice or a teaspoon of vinegar to the water when boiling potatoes to prevent them from discoloring.
    When cooking potatoes to use in potato salad, add a little vinegar to the water when boiling the potatoes. The vinegar causes the potatoes to form a thin crust, which helps them hold their shape.

    Thanks for sharing! icon_smile.gif You know, it's funny... when I think "Hormel" I just think of the chili, but their website has amazing amounts of wonderful amounts on all things food-related! I've come across it many times when doing an internet search, and its a really wonderful site. Who knew? icon_wink.gif
