    I am looking for recipes I can freeze ahead for the upcoming school year for my DD that will be starting 2nd grade this year. Do you have any suggestions? I want to get a head start so she doesn't end up eating PB & J again all year! I'm looking for sandwiches & snacks and anything else you can think of! (We do have a new thermos she is dying to try stuff in as well) TIA icon_biggrin.gif

    One of my favorites is to make muffins and freeze them. Pull one out and wrap it, add a cheese stick, and some fruit, and milk or yogurt. The kids like it and they get a tasty baked good with some good for them stuff in it icon_smile.gif I love muffins so much that I have a hard time narrowing down the number to a few to post.. This one is especially good though Funky Fat Free Banana Muffins

    We also liked Ham and Cheese Scones and I have frozen other scones so I imagine these would be fine.

    Now I need to find some more ideas though icon_smile.gif

    This is a dessert idea but it is relatively healthy, I have already tried to freeze them so I know it works, and my kids love them. Ginger Oat Cookies (no White Sugar Added)

    The recipe has the choice of making them as drop cookies or as bars. I made them as bars and then froze them individually. The kids took them out when they wanted them and I intend to make them a staple for lunchboxes. They were super quick, call for things I always have on hand, and I don't feel too bad about them eating them.

    It just occured to me this weekend that I am going to have to make lunch 4 days a week for my son! He starts all day kindergarten and buying lunch is $3.25 a day. Plus, it being a private school, you have to order a month in advance. He and I made a deal that he could buy 1 day a week (Fri. when they alternate pizza and subs) but would take the other days. So now I need to figure out what to pack. Having a stocked freezer is going to help I think! icon_smile.gif (I hope!)

    We do private too @ $3 a day. We average about 2 days a week and the rest I sent last year. I would guess it will be the same this year. I started out great and healthy...but by the end I was throwing in PB&J and easy stuff. I want to try and get organized this year and get her off to a better start! (We also had to pack a healthy snack so those cookies are sounding pretty good!) Thanks for the suggestion icon_biggrin.gif
