    Gluten Free White Cake Recipe?

    Does anyone have a tried and true gf white cake recipe? I was hoping to make one for Father's Day, but I can't seem to find a recipe. Many thanks, TEC

    This is one of the few things I have not yet been able to make gluten free. I have made a few that are "okay", but none that are really good.
    You might have good luck with a sponge cake, here is a recipe from Bette Hagman's Gluten Free Gourmet (I have not tried this recipe myself so i can not guarantee results);
    1/2 C rice flour
    1/2 C tapioca flour
    3/4 tsp baking powder
    1/4 tsp salt
    7 eggs, separated
    1 tsp lemon zest
    3/4 C sugar
    1 tsp cream of tartar

    Preheat oven to 300 F
    Have a 9" tube pan handy.
    Sift together flours, salt, baking powder.
    place yolfs in 1 1/2 quart bowl, whites in a mixing bowl.
    Whip yolks for 3 -5 minutes, add lemon zest and whip until pale yellow.
    With clean beaters, whip egg whites for 1 minute. Add 1 Tb sugar and cream of tartar, continue whipping to glossy stiff peaks (note- do NOT overwhip or the cake will fail).
    Pour the yolks onto the whites and gently fold.
    sprinkle 1/3 sugar on top and fold together gently. Repeat with the remaining 2/3ds. Incorporate remaining dry ingredients in 3rds by gently folding.
    Pour batter into ungreased pan. Bake in 300 degree oven 50 or 60 minutes, until cake springs back when pressed with a finger.

    Cool upside down and let stand for 2 hours before removing cake (failure to do this will cause cake to collapse).

    Thanks Catfish Charlie! I want to make white (cake) cupcakes for desert on Sunday, but I'll just stick with the chocolate. I'll give this sponge cake a try next week. Sponge cake is one of my very favorites. I love the leftovers toasted for breakfast with strawberries. Thanks for the quick response.
