    MOIST carrot cake/muffins NO ICING

    I have TONS of carrots, and my DH will only put up with so many carrots icon_lol.gif

    I want to make a very moist carrot cake/muffins with no icing.

    a few rules...
    must use carrots not baby food or anything.. b/c I already have the carrots icon_lol.gif

    no pineapple (I dont have any on hand.. only about 1/4 cup pineapple juice on hand lol you can use that if you want LOL)

    no coconut, because DH just doesnt like shredded coconut icon_confused.gif

    PLEASE HELP. I want to make this in the next hour lol

    Or ... another idea. This recipe has no pineapple, no coconut -- it makes 3 layers, so you could either go that route and have 3 cakes or convert to cupcakes/muffins:
