    Hello everyone:

    I am baking a special dessert for a friend who did me a large favor. His wife won't be able to eat it since she suffers from Celiacs Disease. So I wanted to make her something special and custard came to mind.

    That's gluten-free, isn't it? My recipe doesn't call for any wheat products.

    I am always open to new ideas, though. Not being familiar with CD, I haven't a clue about what's really good and allowed in the diet.

    Hey-

    On the home page of Zaar, go to "free of" in the Dietary section on the left, and there's a listing of "free of gluten" there. Just filter it for desserts...The first stuff that comes up is custard!!

    You can use cornstarch. Just make sure that it is GF. My friend, who is a celiac, suggested Clabber Girl brand.

    Edited to add- if you don't know about an ingredient, try calling the manufacturer. They always will provide you the correct info and even mail you a list of products that are GF.

    Edited again icon_redface.gif Some vanilla extracts have gluten. Be very careful when using extracts. Even the small amount in some extracts and spices can wreak havoc.

    You'll love this and it's easy to keep it GF as long as you check the chocolate chips. Only three ingredients (if you dust with cocoa and icing sugar check them too)

    Truffle Cake:

    3 cups semisweet chocolate chips
    1 cup unsalted butter
    6 eggs - room temperature

    1) Heat oven to 425. coat an 8x3 in. cake pan with nonstick spray. Line botom with wax paper; spray paper. Have a larger roasting pan ready

    2) Melt chips and butter together; stir until well belnded

    3) Beat eggs in a large bowl with mixer on high 7 minutes or until tripled and soft peaks form. Fold in chocolate mixure until blended. Pour into cake pan.

    4) Place large roasting pan in oven; place cake pan inside. pour boiling water into roasting pan to come halfway up sides of cake pan. cover cake pan loosely with foil; bake 40 minutes. (cake looks soft but sets when cold)

    5) Cool in pan on wire rack. cover and cool in fridge 3 hours, or until firm.

    6) if desired, lay 5 3/4 inch wide strips of paper 3.4 inch apart on cake. sift cocoa between strips; carefully lift paper. Repeat in opposite direction, this time with icing sugar.
