    Quick Brd:Subin Oil for Butter?

    Is there anyone who understands the chemistry behind substituting oil for butter in quick breads?

    Specifically I'm looking for a great Banana Bread recipee where I can use oil instead.

    Thank you Jessica. I will try it. Whoever posted it - I like the vanilla pudding twist on the recipe, since vanilla has a great tendency to enhance the flavor of the banana.

    Will post my comment to the recipe once I've made it.

    no probleem! glad it helped you out! I like to use white chocolate pudding or coconut cream to vary it up.
