Freezing tofu (before it's cooked) is supposed to give it a "meatier" texture. I read somewhere recently that if you freeze it for a little while it is a little like fish in texture, but longer it becomes "meaty". Most things I have read suggest to slice it first, wrap it, then freeze it. I've been meaning to try it, but have had a little trouble buying enough - the supermarkets seem to not stock enough. Maybe I'll visit an Asian store.
Freezing silken tofu doesn't work very well. It happened by accident in the back of my fridge

- it turned into a sponge.
I too am curious about freezing cooked tofu. Anyone know if you can freeze a tofu vegetable quiche?
