    ...I'm so excited to find this cooking forum, especially as I have recently embarked on a Moroccan/Nth African cooking tangent, branching out from my usual Indian & Asian. I would love to explore other African cooking as well, especially Etheopian; does anyone know how to make that divine injera (hope that's spelled right!) bread? I could eat that by the kilo, and often do at our local restaurant! icon_lol.gif

    I understand injeera making is quite a process, although I did come across a recipe the other day that used pancake mix. I'm sure that will make real Ethiopian cooks scream in horror icon_lol.gif but it might be an easy place to start. Who knows, it might be good! Can post if you like...
