    Crockpot pot pie filling?

    I'm a stay-at-home mom with two kids, 21 mos. and 3 mos., and it recently occured to me that my evenings would be much much easier if I had a crockpot.icon_smile.gif
    I'm really excited to try a lot of the recipes from this forum (thank you!). I've been collecting them like a maniac.icon_smile.gif
    One question: Has anyone made pot pie filling in their crock pot? Can you cut up some raw chicken, put it in there with veggies and broth, thicken it when it's ready, pour it into a pie shell (I was imagining making the crust ahead of time and freezing it, and then letting it thaw the day I would make a filling) and pop it into the oven? I didn't really know if that would work.. Anyone done something similar?
    I'd appreciate any advice! icon_smile.gif

    That sounds like something I'd actually like to try sometime in the future. If you do it, please let me know how it turns out. ^-~ Meanwhile, I found these two recipes that might give you an option...

    Thanks! Hmm..I think I might try cooking the whole breasts (boneless skinless, I guess?) on top of carrots and celery and onion, in broth (the recipe I have takes 4 c for a 9x13 inch pan, so, a bit more for 2 round pie pans..), on low for awhile.. then preparing the sauce when it's done
    (the recipe I love calls for 1/4 c shallots sauteed til tender in 1/4 c butter with 1 T thyme.. then add 1/4 c flour, stir two minutes, add 4 c broth, 1/2 c white wine, boil.. add 1/2 c heavy whipping cream and boil, whisking constantly for 6 minutes)..
    Hehe, on top of shredding the chicken breasts and rolling out the pastry, it's not shaping up to be such a time-saver!icon_smile.gif I've never tried making the sauce in advance - not sure how it would hold up.. ? Maybe I'll try the cream of chicken soup.icon_smile.gif
    I'm wondering why they add the carrots at the end.. Would they just turn to mush in the bottom of the crockpot?
    Looks like it might take a bit of trial and error!
