    So what's for dinner?????

    My life has been super hectic. The kids were both really sick (super high fevers for days...) and we had a series of small things happen like car batteries going dead and dishwashers malfunctioning. Then we got the news that my fil has terminal cancer (on top of many other ailments) and my dh and I flew out to spend the weekend with he and his wife. I am tired. Emotionally and physically tired. I haven't cooked much in the last few weeks but have resolved to get it back together. So I thought, in the spirit of starting over, that I'd start a new thread about dinner.

    So what did you have? Did the kids like it? Did you make them something different? We'd love to know!

    I haven't gotten it together to put a whole lot of thought into dinner yet. So we had an easy healthy dinner. I baked some flash frozen tilapia fillets (that I had defrosted in a bowl of water) with a squirt of olive oil and some salt & pepper. I cooked a box of stuffing with 1.5 cups frozen mixed vegetables and omitted the butter. Then I peeled and seeded some oranges and put those out. I also reheated some peas we had with dinner last week. I didn't have any peas, but the kids enjoyed them.

    I went through and cleaned out my fridge today. There's not much left and we're not grocery shopping until at least next week (if not later). So the next few meals will be interesting. icon_smile.gif

    I'm looking forward to what others are having!!

    I hope you get back on track soon! I know when my schedule is thrown out the door just functioning seems to exhaust me!! Are the kids better now??

    Sometime I made up on the fly and decided to post as they're simple and fast! Had homemade Pintos & Cheese (refried beans mixed w/ green chiles & Cheddar) with them. Good stuff.

    I'm working out my menu for the rest of the month tonight.

    Let's see. I sauteed a bunch of onions (3 medium plus 3 leeks) in a bit of olive oil this morning and then put them in the crockpot along with lentils and brown rice (and water) to make a pilaf. It wasn't as good as I hoped, but it was ok and the kids ate it. I also served applesauce, green salad, and popovers. Because I wanted something sweet I also made cupcake brownies. A good easy and healthy dinner. Tomorrow.... I'm not sure icon_lol.gif

    What did you have for dinner??

    Well, it was supposed to be spaghetti night...but DH got stuck at work and didnt have any time to cook, so they had pizza delivered in (first time for that in close to a year I think). We'll have the spaghetti friday night and tomorrow...I'm thinking porkchops of some sort

    It's been almost 70 here for 3 days now (I DO live in the colorado rocky mountains...what in the world is going on??? icon_eek.gif ) I wanted to make something in the crockpot, but everyone has been in the "grilled out" mood lately...

    I turned all the soil in my garden this weekend. I felt very productive and am antsy to get planting..but knowing Colorado..it will blizzard 7 feet before the end of the month....

    On the "exhausted" note I came home from work and cleaned the kitchen and then just looked around and had no idea what to fix. Luckily I have a very sweet husband who heated up some sauce (adding a few extra veggies) and cooked some noodles for spaghetti. I'm having a big salad since I am already over my WW points for the day (having had doughnuts at work....). I'm just glad he was willing to cook!

    You lucky girl. I have been really tired also...not sure what is wrong with me, maybe a tad anemic...so I got zilch done at home today....made the bed and took a nap, went to get paint for DH. At work and not sure how I'm going to stay awake for 5 more hours icon_rolleyes.gif

    I had no inclination to cook today. Couldnt even bring myself to fix eggs & toast for breakfast...so we had cold cereal...I hate feeling like that. DH is making chilidogs for dinner...yum yuck.gif I brought soup. He'll have awful heartburn 1/2 the night, but..he is CHOOSING to make chilidogs so..... (the kids will have mac & cheese)

    Hope you are feeling better Carrie! (And that you are not getting sick!)

    Tonight we will be at church stuffing Easter Eggs with candy for our annual Community Easter Egg Hunt next weekend. Anyone in the Oklahoma City Metro area is welcome. icon_lol.gif

    So we'll be eating pizza and drinking lemonade tonight. I'm hoping to make pancakes in the morning and an actual cooked dinner tomorrow night, but we'll see. I'm physically and emotionally exhausted plus over-extended at work and a bit depressed and it is not proving to be the best combination. Go figure! icon_rolleyes.gif

    Sometimes you just have to keep putting one foot in front of the other, Jen. I've been depressed/restless for the last few days and I cant explain why....but this morning I woke up and while I was laying in bed said to myself, "at least I woke up right?" I've been much better today and have been working on my attitude/outlook.

    DD is off school next week, after a whole week home with both kids every day...I'll be looking for black market valium by Friday icon_eek.gif

    Dinner tonight is Grilled chicken salad and I made a bacon ranch pasta salad too. Probably a biscuit of some sort to go with it, if I can find a whole-grain one.

    Sunday night we had Spicy Shrimp and Linguine. My son ate a shrimp or 2, pasta, green beans, and pears. My daughter ate a normal helping with sauce etc.

    Last night we had Oven Poached Tilapia and Broccoli . We also cooked extra broccoli and had grapes.

    Both were healthy family meals.

    Tonight I made Super Easy Canned Bean Stew and served it over whole wheat pasta. The kids also had green beans and broccoli (left over from the last few nights). And they and dh had bread along with it. I made a butternut squash and apples thing in the crockpot but it is not yet done so dh and I will have some of that later icon_smile.gif

    I have NOT been in the cooking mood lately...so I threw some assorted pork chops in the crockpot with about 1/2 C. of Light Italian Dressing this am. I baked off some sweet potatoes in the microwave so tonight is Porkchops, Sweet POtatoes with cinnamon butter, and peas. DH wanted biscuits but I didnt get them done before I had to leave for work. I dont know what's wrong with me but cooking just doesnt hold any appeal for me lately. icon_eek.gif
