    Have my heart (and stomach) set on making this chicken today but when I gathered everything together I found that I don't have any sherry left...used it up over the holidays. So my question is can I use a red wine in its place AND will it change the entire taste of the dish?

    IMHO, red wine is too strong, and would definitely change the dish... hmmm.. do you have rice wine? or sake? If not, I would probably use white wine/chicken broth.
