    Your favorite meatless crockpot meals?

    We have given up meat for lent so I am looking for some good slow cooker meatless meals. I make meatless soup in it all the time, but I am really looking for things other then soup. (I love soup, but dh only likes it occasionally...)

    Any favorites??

    I think it would taste great with brown rice but since it cooks a bit faster (10 min) than white rice (20 min) I'd check it early. You could also try regular brown rice...the filling won't be adversely affected by cooking a bit longer if needed and the peppers will just soften.
