    does anybody know of a picture tutorial that teaches people to wrap chinese dumplings?? not jiyazu, shiao mai

    form your fingers on your left hand into a round circle. place the dumpling wrapper over the hole. add 1 tsp or more filling and it will automatically form the shape. fill to the top, set aside- i posted a recipe 3 weeks ago, it's still not up yet-

    are you looking for tutorial for rice dumplings (zhongzi) or meat dumplings (jiaozi)?

    You should be fine if you follow Chia's directions. icon_biggrin.gif I remember watching a chef on TV here make them years ago. She said you should close your fingers around the dumplings as you put them down, to make them a little thin because they will get thicker at the bottom when they are cooked.

    He's centering the filling, placed on the wrapper, around the wrong end of a pair of disposible wooden chopsticks, and then removing the chopsticks. (I don't know, it looks like too much trouble for me.) He later uses the chopsticks to push a shrimp into the top.
