    Low Carb Dinner 1/31!

    Hey low (and low-ish) carbers!

    Sorry I slacked on this meal thread this weekend, major computer snafu!

    Tonight we are having roast turkey (breast for us, dark meat for kiddos) baked sweet potatoes w/ cinnamon butter (trans-fat free) margarine and sugar snap peas. Was going to have twice baked fauxtatoes recipe #108003 but didnt have enough cauliflower! What did you all eat today?

    Low carb meatloaf (no bread crumbs etc.) used Italian seasonings, eggs and Parmesan cheese. It was tasty. Served with sauteed zucchini and mushrooms topped with a little Parmesan.

    I had my concentrated high-fiber carb meal, black beans over mashed sweet potato with salsa, sour cream and cheddar cheese, side salad. This is a very satisfying meal for me, I never am hungry after I eat it. I don't consider it to be low-carb, I consider it to be "correct" carb, if that makes sense at all icon_smile.gif

    Lean Cheeseburger on Sugar Free, Whole Wheat Buns with a ton of lettuce and onion. The side will probably be slaw or mushrooms or something.

    Last night we had Skillet Sirloin (browned in cooking spray instead of oil) and Roasted Broccoli with Lemon Garlic Butter and Toasted Pine Nuts (made with smart balance spread instead of butter) and Roasted Sweet Potato Sticks

    It was all beyond scrumptious!!!
