    Hey Bergy those Enchiladas sound great and I've never made them in a crockpot before. I would like to give them a try substituting black beans for the meat. Do you see any reason that wouldn't work? Also, do you use an oval crockpot to fit these into or are you just using small tortillas?

    My crockpot is oval and I think the Black Beans will be wonderful! With Black beans I like to spice it up a bit more - enjoy!
