    Converting Recipe's for the Breadmachine

    Anyone found any goof-proof methods for turning 'baked' bread recipes into fantastic bread machine ones?

    I do it all the time. First you have to make sure the size of the recipe will fit in your machine. Most 2-lb. machines will hold a recipe with a maximum of about 4 1/2 cups of flour. I never bake my breads in the machine. I prefer to shape and bake in the conventional oven. If you bake in the machine, getting the amount of yeast just right so it doesn't rise too high and overflow might be a little tricky. Most bread machine recipes don't call for quite as much yeast as a regular recipe does. That isn't a problem for me because I much prefer the crust of a bread baked in the regular oven. Other than that, I really don't make any changes. Just follow the order of what ingredients go in according to your machine manual. Sometimes I will make a recipe that calls for 6 or 7 cups of flour and just cut the recipe in half.

    How about converting ABM recipes to "normal"??? I see so many recipes I want to try and then those dreaded words, "put into your bread machine". I rid myself of mine a long time ago.

    That's easy, too. Just dissolve your yeast in the liquid, then add the sugar, fat, and lastly the flour and salt. At that point you will need to knead for at least 10 minutes. Be careful not to cut the kneading period short. It is difficult to overknead by hand. Cover and let the dough rise until doubled. Punch down and shape, rise again, and bake. I generally bake loaves at 350 F for about 30 minutes. If your loaf is very small or very large, you may need to adjust the time accordingly.

    Another thing that I do if the recipe calls for less than 1 packet of yeast, I just add the whole packet. Bread machine recipes sometimes call for less yeast so that the rising loaf doesn't overflow the pan or 'raise the roof' icon_eek.gif
