Here is one of my favorite German Breakfast Recipes. My mother often made this on Sundays, because during the week we only had hard rolls (Broetchen), or heavy dark bread (Vollkorn Brot) with butter and cold cuts!
Kaiser Schmarren!
(Emperor's Pancake,Kaiser Franz Joseph of Austria)
1 c flour
3 T sugar
1 c milk
2 eggs
5 T melted butter, or oil
dash of vanilla
dash of salt
Buzz in blender or whisk until well combined and frothy. Let stan 15-20 min. to allow the flour to swell.
! Large tart apple,peeled and cored. (Granny Smith, Courtland, Winesap), slivered.
1/2 c raisins, I like to plump the raisins, sprinkled with a little apple juice or water. Let them stand for 15 mim. or buzz them in the microwave until they are all happy and fat.
sliced almonds aprox. 1/4 c or more if desired.
Heat 2-3 T oil in a large (12") heavy skillet over med. heat. Pour in the batter and sprinkle with the apples, raisins, and almonds. cook until the underside is brown, and the top is no longer runny. Now this needs to be flipped over! I find it easyer if you cut it into quarters first. Now take 2 forks and star to tear it all int bite size pieces. Cook a few more min..
Sprinkle with fresh lemon juice and lots of powdered sugar! Now enjoy!!!My mother also srinkled it with some "Kirschwasser" and sometimes plumped the raisins also in the "Kirsch"
