    Recently I tried this chocolate pudding recipe from www.meals.com that had evaporated milk, and I foolishly thought it was the same thing as dry milk (i.e. powdered milk). I ended up with a "pudding" that was so thick, it set into this fudge-bar-like consistency. Then I trotted off to foodsubs.com, and figured out that evaporated milk is NOT milk powder. While the website said that I could substitute it with half-n-half (which we don't get here) or cream, I was wondering if I could substitute it with evaporated milk in different proportions. The "pudding" really tasted fantastic, it just had the wrong consistency!

    The recipe called for 1 1/2 cups of evaporated milk. Now to reconstitute evaporated milk, you mix it with an equal amount of water, but for powdered milk, you have to mix it with three times the amount of water. The recipe also had 1/2 cup water, so I'm wondering if I could make an effective substitute using 1/2 cup of powdered milk for the 1 1/2 cups of evaporated milk (since 1/2 multiplied by 3 is 1 1/2 icon_smile.gif

    I think you need to use 1 cup of powdered milk plus 1 1/2 cups of water, plus that other 1/2 cup water that the recipe called for also.

    1 cup powdered milk + 1 1/2 cups water = 1 1/2 cups evaporated milk

    Anu, I'm not all that sure it'll work, but as evaporated milk is basically double-strength milk, to equal 1-1/2 cups evap milk using dry milk powder, take the liquid used to make 1-1/2 cups but use double the amount of dry milk powder. In other words, you're making it double-strength.

    I'm not sure this would taste good, mind you, and I'm certainly not convinced this would equal the consistency of evaporated milk. Personally, I'd use cream.

    Arrghhh, this is maddening! But thanks everyone, for your help! I'll post the recipe here anyway, because it really, really tasted good, so I hope you guys like it!

    In the meantime I found this on the internet: "Make evaporated milk: one cup dry milk mixed with 2/3 cup water is the equivalent of 1 can of evaporated skim milk."

    Steve, are you sure that substitution isn't for the little can of evaporated milk? Here in Canada, at least, the tins come in two sizes.

    No, Lennie I'm not sure. However if you check out the recipe Anu is using it for it says 1+1/2 cups or 12 ounces of evaporated milk. So if the substitute comes to less than 1+1/2 cups Anu will know she has to make more. icon_smile.gif
