    Happy New Year!!!! Did everyone have a great celebration?
    We didn't have plans, but then, like usual, the house filled up with young adults. Made some appetizers on the fly and ordered pizza. Had a great time!!

    Next Saturday I will again be catering a small "banquet" for 23 women. Very excited!! Most of this week will be using up leftovers from the holidays.

    Here's my plan. Share yours!

    Saturday - Carne Asada tacos using leftover Prime Rib. Didn't get made last week

    Sunday - Prime Rib and Beer Chili, corn bread and salad

    Monday - Creamy Tomato and Spinach Pasta with salad

    Tuesday - Red Beans and Ham with rice

    Wednesday - Tex-Mex Chicken Tortilla Soup with bean and cheese burritos

    Thursday - Jalapeno Philly Cheesesteak sliders

    C - Sounds like you had a great NY's.
    Very quiet for me. Been since since Dec 30. Just a cold flu combo. NOT horrible, just really aggravating.
    NY's eve went to a party, but very low key; that was nice. NY's just me.
    Now, back to normal. Xmas down, and work is piling up.
    Leftover too; and really using up stuff on hand before I do a big restock.

    Open house. My friends just renovated a 1950's home. Lots of munchies and cocktails. I work with her sister in catering. If I am hungry later, soup.

    SUN ...
    Lady #4: Out of town
    Me: Mac and cheese w/leftover ham from NY; sauteed broccoli

    MON ...
    Ladies #1 and #2: Mushroom lasagna; Italian salad; crusty bread
    Me: French onion soup; roast beef sandwich; spud salad (if any left)

    TUES ...
    Pan fried tilapia w/lemon and capers; rice; carrot and celery saute

    WED ...
    Ladies #1 and #2: TBD, they think they have plans
    Me: More leftovers again ... this is becoming a habit - Mac and cheese as is; green salad w/ roasted tomato slices or fresh fruit

    THURS ...
    Turkey soup; crostini with a marsala mushroom topping

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD
    Me: Pork tenderloin; baked sweet potato; romaine w/cranberries, walnuts, and a warm onion vinaigrette
