    Hello I want to ask about best recipe for spong cake "white normal one",i found some recipes with 5 eggs ,some with 8 eggs.also some cook it in oven in 25 minutes and some in 40 :45 minutes. also i want to ask about tricks to make successful spong? is it ok to make it in pyrex pan or metal pan is better? also shall i grease the pan or sprinkle flour before pouring the dough? also if i divide the dough on 2 pans ,shall i recude time or same time? is it better to cook it in normal oven or convection oven is ok"i heared that microwave ovens if they have convections are not good as normal ones in cakes,is that true?" thank you

    I don't make sponge cake often enough to tell you what works best, but I can tell you that the more egg yolks the cake has, the more yellow the color will be. So you want to use a sponge cake recipe that has few eggs, or that has more egg whites, or no eggs at all for a whiter color.

    Whenever you use a convection oven or glass pans you need to reduce the temperature. When using convection oven, you also have to expect that the cake will bake faster than in a regular oven.

    Three Ingredient Italian Sponge Cake has the largest number of reviews. The pans are not greased, just put parchment paper in the bottom.

    This recipe does have you grease the pans, Hot Milk Sponge Cake - only a few eggs here, and it looks very white.
