    For the last several months we have been collecting and discussing our diabetic favorites. Thanks to all the wonderful selections we now have a cookbook with 67 delicious recipes. Suggestions and wonderful recipe finds are always appreciated. Please keep those suggestions coming!

    This month the forum would like for you to join is in making some of the delicious recipes from the cookbook. Come on by, select a recipe or 2. Once the recipe has been made and reviewed, stop on in and report your completion. No pressure just lots of fun, discussion and as always good eating.

    This cookbook is a work in progress, it's meant as a source of ideas for people who come to the diabetes forum and ask for diabetes friendly recipe ideas.
    I can't add them to the book, but Paula will be delighted to do so when she's back!

    That salad looks yummy.gif The carb count is a little high due to the canned oranges and marmalade. In looking at the recipe I might be inclined to make smaller servings and reduce try reducing the marmalade a tablespoon at a time.

    I am home!! Last night I cooked from my pantry and freezer. One of the recipes was found here and 2 others else where. Greek-Style Marinated Mahi Mahi by Chris Reynolds was a delicious and quick way to prepare mahi mahi. It was served with grilled squash and a Lemon-Feta Quinoa Salad which I will be posting later.

    It is so good to be home! It was great seeing old friends and then I spent a week being Grandma. The granddaughters can keep one very active. icon_smile.gif Both were great be is is really good to be home. I have missed you guys. icon_smile.gif
