it's been kind of interesting to look at some of the old posts that have been buried for years. Many questions recur - how to make bread without a bread machine or with a stand mixer or vice versa, what is wheat gluten, various substitutions. There are a number of posts on quite interesting experiments people were baking, but they never came back to let us know how they went.

Gratifying in particular are the ones from people trying their first loaves or rolls or whatever, and reporting back on their success. Always love to get people into the baking fold!
