    Recipe for Zafrig - a Croatian dish

    I'm planning a Croatian dinner for a large group and have a recipe for a vegetable dish featuring cabbage and green peppers. It says to "pour over Zafrig and simmer for 10 minutes" - recipe separate --- but there's no recipe for Zafrig there or on other recipe sites I've tried. Do you have one you can share?

    Zafrig is another name for a roux, which is a cooked mixture of flour and fat. Does the recipe contain instructions for cooking some flour and fat together?

    Anyway, if it doesn't, here's a recipe:


    Zafrig ingredients

    * 1⁄3 c Lard or oil
    * 1⁄2 large Yellow onion
    * 1⁄3 c flour
    * 1 T Paprika

    Cooking Zafrig

    1. Melt 1/3 to cup lard (or use oil or like quantity) over medium heat.
    2. Cut half of a large yellow onion into small pieces and simmer in the lard until transparent.
    3. Add 1/3 to cup flour and stir constantly until flour is dark brown.
    4. Add 1 tablespoon paprika; stir into paste and pour the paste over the cuspajs (recipe separate).
    5. Serve in large soup bowls and have plenty of french bread on hand.
    6. This is a meatless main course, serve at least once a week in jugoslavia.
    7. The zafrig is also used in boiled pinto beans with smoked ham hocks.

    Many thanks for the Zafrig recipe (and explanation that it is a roux!). I'm just married to a Croatian, but people expect me to know all these things![/u][/i]
