    Menu for Week of August 17 through August 23, 2013

    Hello menu peeps. How are things with y'all? Things are a little busy, but it's summer. That's what we do!!!
    I'm still doing ZWT; we have a couple more weeks left. I think we're in my favorite regions!! Southeastern Asia and North Africa!!

    Here's my menu for the week. Share yours!!

    Saturday - watching a couple of the grandsons, but hopefully will still make Asian Comfort Food (Coconut-Curry Chicken Noodle Soup) and Morrocan Burgers With Spicy Mayo. If not, just regular hamburgers for the kiddos.

    Sunday - going to a BBQ and bringing Killer Baked Beans... and Easy Tortellini Pesto Salad

    Monday - North African Spiced Chicken, Corn Marrakesh and Moroccan Couscous & Chickpeas

    Tuesday - Grilled Asian steak and Grilled Potatoes With Asian Seasonings

    Wednesday - Tacos, rice and beans

    Thursday - Chicken Rama in Thai Peanut Sauce with rice and a salad

    Friday - out to eat or leftovers!

    C - You got everything well organized; not too busy here - but FL, it is pretty much summertime ALL the time.

    Last Wed, I screwed up my knee, BIG time. NO doc yet, but in a brace I bought. Slowly improving, but my Chiro Doc Friend did an xray, and several fractures showed up; don't know on any ligiments, an MRI is needed. Insurance kicks in Sept 1. So. NO cooking, NO anything basically for a week or two. My friend is handling my ladies for the next week or two; so no worries there.

    So, my menu is Stouffers, easy freezer items, maybe a hog dog or salad with tuna. I can stand a chop a few things. A mix of things, and I will just pick what I feel like depending on how my knee feels. I still have to work, still water plants, laundry, feed the cats, etc. So, depending on how much I have to do, will depend on dinner.
    ----------------------------------------------------
    - Stouffers mac and cheese, chipped beef, and stuffed shells
    - Small single pizza; I can added my frozen pepper blend, maybe some ham or extra cheese, tomato, etc.
    - Pork stew from the freezer, add some buttered noodles on the side (they can actually be done right in the micro)
    - Chicken and pasta with a lemon cream, also freezer (just heat); add some tomatoes on the side
    - Poached chicken from the freezer, could make into chicken salad. Add some celery, onion, mayo and presto
    - Also, I have peaches, watermelon, salad stuff, soup in the freezer, and my freezer burritos too.

    So that is my menu; I have no idea in what order. Other than a little chopping for a salad; I'm not cooking much until the knee feels better.

    I'm not starving. Last night, stouffers lasagna; and, salad which I had to cut all of 4 tomatoes in half; and had to nuke a roll. Pretty good for a $2 meal and 15 minutes, lol.

    Well, that is it for me. Wish I could be inspiring, but I can't. Everyone enjoy the last couple weeks of summer. Enjoy cooking; and have fun! Back to cooking soon.

    SC, so sorry about your knee! It is so frustrating when things like that happen in a split second. It looks like I'm not the only one suddenly swamped in various ways. I think mainly I have just been really busy with work, plus some people in town. Anyway, I have been working from a very vague plan in my head so far this week; and only based on what I have around.

    Sat - leftover grilled chicken (our neighbor's leftovers because they went on vacation; we are taking care of their cats) with roasted small potatoes (also donated by the neighbors -- they seemed to be from someone's garden because there was a LOT of dirt on them!) and green beans

    Sun - leftover squash lasagna from last week

    Mon - fish with bok choy and veggies with "real" ramen from Taiwan (brought back for us by a student -- I was worried that it would be too salty but by the time we mixed in all the veggies and fish, the flavor was perfect)

    Tue - quesadillas with black beans, onion, and garlic; with spinach

    Wed - fish with green beans and pasta with the dill pesto sauce that I made and froze a few weeks ago

    Thu - chicken with bbq sauce, polenta fries, and broccoli

    Fri - burgers with various sides; or leftovers, or based on farmer's market if I make it there

    Maybe people are starting school this week and don't have much time to post. --M
