    Looking for a recipe from "My Great Recipe" Collec

    I am looking for a recipe I believe the name is Joe's Pork Chops. It's in "My Great Recipe" card collection from way back (1984 or so). I don't have my collection anymore but I remember how good the pork chops were. If someone has this collection and recipe please post it.

    What were some ingredients? If they had dill and a cream sauce, this might be it.
    Or something simpler, layered with potatoes and onions?

    This is not the recipe but it sounds yummy. I may try this one as well. The recipe I'm looking for had the name "Joe" in it and it didn't have dill. Thanks so much for the recipe.

    I don't remember the ingredients, but there are only a few pork recipes from "My Great Recipe" card collection and only one of them has "Joe" in the name. I've found several pork recipes with the name Joe but it isn't from the "Great Recipe" collection.

    Maybe is too late but hope Juls2112 can see this recipe that I just found and could be the one she was looking for, from Mc Call's My Great Recipes Card Collection. It doesn't say the card and group number but here it is just in case:

    6 rib pork chops, cut 1-1/2-inches thick, each with a pocket
    Savory Stuffing:
    1/4 cup, 1/2 stick, butter or margarine
    1/2 cup finely chopped onion
    1/2 cup chopped celery
    2 cups soft bread cubes
    1/2 cup dark raisins
    2 tablespoons chopped parsley
    1/2 teaspoon salt
    1/8 teaspoon pepper
    1 teaspoon dried marjoram leaves
    1/4 cup apple juice
    1/2 teaspoon salt
    Apple juice
    Glazed Apple Rings, recipe follows.

    Preheat oven to 350 degrees. Wipe pork chops well with damp paper towels.
    To Make the Savory Stuffing: In hot butter in skillet, cook onion and celery until tender, about 5 minutes. Add bread cubes and brown slightly. Remove from heat. Add raisins, parsley, 1/2 teaspoon salt, the pepper, marjoram, and 1/4 cup apple juice; toss mixture lightly to combine.
    Fill pockets in chops with stuffing. Stand chops on rib bones in a shallow roasting pan; sprinkle with 1/2 teaspoon salt. Pour apple juice to 1/4-inch depth in roasting pan. Cover chops with foil.
    Bake chops 45 minutes. Remove foil; bake, uncovered, 45 to 55 minutes longer, or until chops are tender and brown. Garnish with Glazed Apple Rings. Makes 6 servings.

    2 pounds red cooking apples, 6 apples
    1/4 cup lemon juice
    1/2 cup, 1 stick, butter or margarine
    1/2 cup sugar
    2 tablespoons light corn syrup
    1/2 cup water

    Wash apples; do not peel. Core; cut into slices about 3/4-inch thick.
    In medium bowl, toss apple slices with lemon juice.
    To Make Glaze: In large skillet, combine butter, sugar, corn syrup, and water. Cook over medium heat, stirring, until sugar melts.
    Layer apple slices in skillet. Add any lemon juice remaining in bowl. Cook over medium heat, turning once, 5 to 7 minutes, or until glazed and tender but not mushy. Makes 8 servings
