    Those pesto polenta balls look great with that golden color. Do they get deep fried or can you do them in the oven?

    We were away this weekend and came home exhausted! I've been recovering and doing laundry and now can't put off shopping any longer. Here is the menu, such as it is.

    Sat – Asheville

    Sun – we had pasta with jarred sauce, frozen broccoli, and canned clams (pantry/freezer meal)

    Mon – we had "stirfry" with frozen fish, frozen green beans, garlic, and store-bought black bean sauce, with cooked rice from the freezer and toasted almonds (another pantry/freezer meal)

    Tue – Olive-Caper Spread with bread and some sort of chickpea/vegetable side

    Wed – beef version of Chicken Shwarma - Chawarma Lahme with tortillas, tomatoes

    Thu – Freezer Ready Cornflake Chicken Fingers (in the freezer), zucchini, chickpea fries

    Fri – going to free outdoor afternoon/evening concert; I think I will make Turkey Tamale Casserole ahead of time to have when we get back


    Thx M...I was thinking of doing them in the oven; oil spraying the top

    I don't do alot of deep frying, but reckon in a deep fryer, 1) they don't come out greasy when well drained and 2) because it was for my blog, I needed the crispy "look"

    But think they would go well in the oven too!
