    June's Tag Game ~ El Maíz ~ Corn

    ~ Corn is called Maize in many countries, which is from the Spanish term Maíz (and which is the word for "corn" in Spain). It’s a grain that is classified in the Zea genus of the Poales plant family, and it was first domesticated in the Americas in prehistoric times. It was introduced into Africa by the Portuguese in the 16th century and has since become one of the most important crops on the African and European continents. Indeed, corn remains an important staple food in Spanish cuisine today, too.

    In addition, corn is the #1 produced crop in the U.S., with more than 332 tons grown annually in the U.S., particularly in the Midwest states which is considered the heart of the farming belt, and in fact corn is the most widely grown grain crop in all of the Americas.

    The leafy corn stalks produce ears which contain seeds called kernels. And although it’s actually botanically classified as a grain, corn is used in cooking primarily as a vegetable side dish, but is considered a starch in some world cuisines.

    Corn leads all other crops in value as well as in the volume of production. Approximately 40% of the crop, nearly 130 million tons, is used for production of ethanol.

    Sugar-rich varieties of corn are called sweet corn and are grown for human consumption, while field corn varieties are grown primarily for animal feed. Sweet corn is usually shorter than grain corn varieties.

    ~ Corn forms the basis of many basic pantry staples, such as porridge (made from maize meal) and polenta used extensively in Mediterranean and other world cuisines. In addition, corn is a major source of starch and is therefore ideal for the production of maize flour (cornstarch) which is a major ingredient in home cooking. Corn is also used for the production of corn oil, corn syrup, grain alcohol, beer, and many types of pet foods and farm feed.

    Did you know that corn on the cob is a summertime favorite in such parts of the world as the U.S., Britain, Canada, Cyprus and some parts of South America and the Balkans, but it’s virtually unheard of in most European countries?

    Corn in World Cuisines

    ~ Corn is a an economic and widely available food product throughout the world, and therefore figures quite prominently in many world cuisines. For instance . . .

    Africa - Corn is integral in making mielie (known as mealie pies, in English) is a cornmeal mush made from yellow corn which serves as a staple food throughout many parts of Africa which is then used to make a variety of dishes. Many other corn dishes are popular throughout Africa as well.

    Brazil – Corn is used to make angu (the Brazilian version of Polenta), as a well as a sweet dessert called canjica (which is corn boiled in sweetened milk).

    Caribbean - A dish similar to Africa’s mielie is popular in the Caribbean, and depending on the region might be called Pastelle, Cou-cou, Funchi, Funjie, Funche or Mayi Moulin.

    India and Pakistan – Corn is used to make makki di roti, an unleavened bread that is popular in Pakistan and the Punjab region of India.

    Italy - Popular throughout the Mediterranean region, Italian Polenta is quite popular. It’s similar to African mielie, though it’s more typically made from white maize whereas African mielie is usually made from yellow maize.

    Mexico – Corn is the main ingredient in making hominy, pozole, atole, taco shells, tortillas and tamales (and thus is an integral base ingredient for such dishes as tacos, quesadillas, chilquiles, enchiladas, tostadas, chimichangas, and burritos).

    Peru – Corn is a major ingredient in beverages, such as Chicha (a fermented alcoholic beverage) and a soft drink called chichi morada (purple chichi).

    Romania – Corn is a major ingredient in Mamaliga, which is Romania’s and Moldavian’s version of polenta.

    United States - Corn is used to make cornmeal mush and cornbread throughout the U.S. and it’s the basis for the popular hominy grits that is extensively served throughout the southern U.S. states. Corn is also the basis for dry breakfast cereals (such as Cornflakes) that are found nearly everywhere throughout the U.S.

    Nutrition and Health Benefits

    ~ Corn is low in Saturated Fat, and very low in Cholesterol and Sodium. A 1/2-cup serving of whole kernel corn (about 128 g, or 4.5 oz.) is 86 calories, It provides 20 grams of carbohydrates, 0.6 grams of fat, and 2.5 grams of protein, which is approximately 4% of an adult’s daily recommendation of total calories, 7% of carbohydrates, 5% of protein and 1% of fat. Corn is also a great source of thiamin and folate, and it provides nearly half of an adult’s daily recommendation for dietary fiber and therefore an ideal vegetable choice for many diet plans.

    Certain types of corn can be made into healthy snacks as well. One example is popcorn, which is high in fiber and low in fat and calories (as long as butter, oil and salt are added in minimal quantities).

    Corn is healthy but is perhaps not the most nutritious vegetable choice in comparison to other vegetables that contain less sugar and have higher nutritional content. Also, the website explains that corn is also slightly inflammatory and can cause mild inflammation in some individuals, which is believed to be due to the fact that that corn can quickly raise blood sugar.
