    Snapper w/salsa, broccoli cauliflower salad; roasted spuds

    Italian panko crusted (that I ground fine), pan sauteed mangrove snapper, topped with a tomato cucumber salsa.
    A mix of tomato, cucumber, jalapeno, scallions, and lime juice (all from the garden)

    On the side. roasted potatoes with a garlic basil/rosemary oil; and a basic cauliflower broccoli salad. I simply dressed it with scallions, mayo, greek yogurt to lighten it up a bit, cider vinegar, and plenty of salt and pepper. I didn't get too fancy.

    Dessert - Fresh raspberries with a minted sugar.
    DELISH!! Not very fancy, but sure was good.

    Deb, the snapper was so sweet as were the berries. I had just a little minted sugar left from feeding one of the ladies, so I sprinkled it on ... it was so good.

    Thx, it was tasty; and yes, I know Zurie love her fresh fish. I caught this about a month ago or less. It is tasty and very flaky. I should of taken a pic when I dug into it.

    It's a small fish, so the fillets aren't big, but very flaky, almost like flounder, but a bit firmer. One of my favorite fish.
