    Menu for Week of May 18 through May 24, 2013

    Hello foodies!!!! A gorgeous overcast day here in Cali. My kind of day!! We had such a wide variance of degrees this past week! On Mother's Day and into the early part of the week it was over 100!!! Now it's a nice cool 70s. Oh well.

    How was everyone's Mother's Day? Mine was nice. My DH was out of town, but my 2 younger DS's made me a nice dinner of Chicken Parmesan, garlic bread, salad and dessert.

    Even tho DH was out of town, he got me the brand new CrockPot. The one where you set it to what time you want the food to be done cooking. Used it for the first time yesterday and it worked great! I was leery as it was chicken, which tends to overcook in a crockpot. Yay!!

    So here's my menu for the week. Share yours!!

    Saturday - Maple Black Pepper Pork Chops and Roasted Vegie Mac and Cheese

    Sunday - probably baby back ribs with baked potatoes and corn

    Monday - Italian Beef Patties with Balsamic Cream Sauce with mashed potatoes and green beans

    Tuesday - Crock pot bourbon chicken

    Wednesday - Avocado lemon pasta, salad

    Thursday - open for stretch

    Friday - out to eat or leftovers!

    Still finalizing mine. I am house dog sitting for a friend this week. NOT at his house, but need to go up there and check in. Also, some follow up dental work, so may be some sore teeth.

    I'll be back soon.

    Hi Everyone ... this week is going to be really hard; and, I thought last week was bad. Everything got switched around. A few things going on work wise, and dog sitting for a friend; and, his place isn't exactly around the corner.
    I think I will make the plan; but, I'm sure things will change.

    SAT ...
    A good friend is on vacation; so, I will be taking care of the pups (3 labs). In return, he always leaves me gift certificate to my favorite sushi place - so that will be dinner on the way home after their evening walk. Or, I should say my evening RUN. Try taking 1 brown lab, a pup; a 3 and 6 yr old for a walk - they pretty much take me.

    SUN ...
    Lady #4: This week is 2 dishes only then, Sat and Sun dinner next week
    - Blackened shrimp caesar salad; garlic bread
    - Steak tips in a red wine gravy, w/mushrooms and pearl onions; buttered noodles; baby glazed carrots
    Me: Leftover quiche from the freezer; salad; cantalope

    MON ...
    Ladies #1 and #2: Cheese and kale ravioli, with a mushroom cream sauce; grilled romaine with a warm balsamic dressing; and, garlic bread
    Me: Work, freezer stash - probably ribs. My friend also dropped off 5 zucchini; so, I'll make something with them.

    TUES ...
    Soup, another freezer stash (vegetable); grilled ham and cheese sandwich; grilled peaches

    WED ...
    Ladies #1 and #2: Previous plans
    Me: Pasta w/yellow tomato sauce (freezer stash), adding grilled asparagus, peas, and fresh basil, black olives and pecorino romano cheese; something with salad from the garden

    THURS ...
    Lady #3: Taking her a dish for a potluck at her nursing home; TBD
    Me: Dinner w/friend; grilled steak; potato wedges; and cauliflower and broccoli w/cheese in a foil pouch

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD
    Me: Out, happy hour, probably our fave Mexican place

    The ladies I have to stick to a menu; but me ... I can always change. I think FREEZER stash is really the key this week!

    I always like to keep a bunch of things in the freezer I can heat up, I even have one of my homemade pot pies left.

    Even though they are freezer stash, I don't really think of them as leftovers per say.

    Happy Belated Mother's Day...you menu both sound VERY yum too!

    Our two legged and 4 legged furry kids spoiled me too lol

    made Rhubarb & Red Lentil Soup with Dukkah

    KNOW it "sounds" to be an unusual combination of flavors, TRUE!
    But this is a very healthy and yum soup and never would have thought to use dukkah in soup too

    WHOO HOO!

    Here I am, coming up for air...freezer meals are the greatest when you just can't get out to shop. I don't like to put them on my plan so that I will have them on the days when the plan doesn't work out or when there isn't yet a plan.

    Sat – spaghetti (sauce “brick” from freezer)
    Sun – tuna melts with veg
    Mon – Kenyan Ground Round Curry from freezer with cooked rice from freezer and green beans
    Tue – broiled salmon with a honey-dijon sauce with grits and Brussels sprouts
    Wed – greens with clams in garlic/pesto sauce over “polenta” (starting from leftover grits)
    Thu – grilled cheese with Two-Step Artichoke Tapenade (which I will double and make with a whole lot of roasted garlic rather than a small amount of fresh) and veg
    Fri – Slow Cooker Chicken Mole with zucchini and quinoa

    Now I have to shop (one of my least favorite things). Have a good rest of the week! --M
