    Mexican Rice
    I am wondering why the amount of tomatoe/onion mixture is not increased when I increase the # of servings from 8 to 12. It is still saying to use 2 cups of the mixture. This can't be correct if the rest of the ingredients are more...like the amount of tomatoes increased to 18 oz. Would love to know if anyone else used more of the amount when they increased the servings. I am making it for a party tomorrow and need to know asap. thanks, Lisa

    It only increases the quantities shown in the ingredients list. It does not increase the quantities shown within the instructions. When you change the number of servings, you are notified of this, between the number of servings and the beginning of the ingredients list: The ingredient amounts have been scaled to the new serving size. Any ingredient amounts, cooking times, and/or temperatures referenced in the directions still refer to the original serving size.
