    Hello menu friends!!! It's an absolutely gorgeous spring day here in California!! Loving it! So sorry I'm stuck at work instead of enjoying it! But at least my new office has a window (I was in a windowless cubicle before).

    I finally made all my recipes on my menu last week!! Whew. Sometimes I really do need to leave one day open with no plan, cuz something always happens on another day and I can just move it over!!

    This coming week is Bunco at my house!! I'm so excited. I love hosting it and am sorry it's only once a year.

    So, here's my menu for the coming week. Share yours!!!

    Saturday - Green Chili Roast Beef Sandwiches, plus trying out a recipe for Thursday - California Pizza Kitchen Chopped Salad but with the dressing from Cheesy Italian House Salad With Parmesan Dressing

    Sunday - Senate Bean Soup with cornbread

    Monday - Chicken and black bean chimichangas with grilled onions and peppers, rice

    Tuesday - leaving open for flex icon_smile.gif

    Wednesday - Meatball subs and salad

    Thursday - BUNCO!!
    Spinach Dip Pinwheels, Cheesy Italian House Salad With Parmesan Dressing, California Pizza Kitchen Chopped Salad, Ziti Pepperoni Casserole, Focaccia with caramelized onions and tomatoes, Charmie's Soft Sugar Cookies with Vanilla Buttercream Frosting (From Sprinkles Cupcakes) (as party gifts) and Easy Strawberry Cheesecake Trifle

    Friday - leftovers!

    C - you are early and on top of things, I didn't get anything done this week, crazy week for cooking.

    This week will be very up in the air. I'm helping a catering friend a few nights; also, have a friend in town visiting. So, I really don't know what the schedule will be. I did a rough plan; but, the dinners I am sure will shift around. And, I always have freezer stash (soups, pot pies, pot roast, etc), so I won't go hungry.

    Date - yes, a date. Not too excited, my gf set it up. Early drinks and appetizers. If I'm home early ... I can make a fried egg sandwich

    SUN ...
    Lady #4: 3 meals to be delivered on Mon am
    - Green chile rice; Mexican spiced grilled chicken; melon salad
    - Fish tacos with a cumin slaw and pickled onions; black beans; and mango sorbet
    - Meatloaf; mashed horseradish potatoes; glazed carrots
    - Loaf of whole wheat bread
    Me: Salad ... using up (olives, artichokes, tomatoes, tuna, black beans); and a homemade dinner roll

    MON ...
    Lady #1: Classic Mushroom Swiss Burger; onion rings; spicy ketchup; 5 bean salad
    Lady #2: Burger too, with caramelized onions, bacon, blue cheese
    Me: Soup I made last week. Using all leftovers from the freezer. Veggie all the way, it came out fantastic! I think some parmesan bread sticks on the side - or a salad. Depends on what I feel like

    TUES ...
    Sesame chicken thighs (recipe TBD); sesame noodles (TBD as well); peaches and melon or strawberries

    WED ...
    Ladies #1 and #2: Same meal as I had on Tues
    Me: Beef stew or pot pie from the freezer; salad from the garden

    THURS ...
    Lady #3: TBD, but it will be soup; rolls; baked custard
    Me: Leftover chicken used some way - a salad, wrap, warm sandwich, etc. I may have to work; so, no idea.

    FRI ...
    Ladies #1 and #2: Card/Game Night - TBD, something Greek!
    Me: Shrimp patties with a peach relish; baby red potatoes; coleslaw

    Again, I know this will change, but ... it is a plan. I have everything on hand; so, I can change the nights around. The chicken would be the only thing I would need to thaw first.

    Morning all icon_biggrin.gif Went to a conference in DC last week and got to see my step-son in Annapolis. Great time. Now, back to work.

    The plan--Mon-Fri
    Monday: baseball game night--Hamburger Steaks, roasted brussels sprouts, steamed yellow squash and salad

    Tuesday: baseball game night--Caribbean Grilled Tuna, Grilled Eggplant, salad and Frozen Strawberry Delight

    Wednesday: Chicken and Wild Rice Casserole, steamed asparagus, and salad

    Thursday: Broccoli Bakers, baby carrots and ranch dip, salad and Pineapple Lemonade

    Friday: baseball game night, eat out after

    Work Lunches: Sombrero Pasta Salad and Zesty Rice and Bean Salad

    Breakfast: Apples and Sausage

    Snacks: Lemon Crinkle Cookies

    Hi,

    I am with you all on having plans that shift around to different days. But it just goes to show that having a menu plan, even if it changes, is so much better than no plan!

    Sat – leftovers from A Simple Chicken Satay with bok choy; 3 cheers for leftovers!

    Sun – Spanakopita (Greek Spinach Pie) (from freezer!) with veg

    Mon – Salmon Soup with leeks; with oatmeal bread from freezer (King Arthur recipe)

    Tue – my aunt is passing thru from Tucson; I think I will make Peruvian Anticuchos (but with regular beef), millet or rice, green beans

    Wed – leftover Vegetable Biryani (freezer) with tortillas

    Thu – Freezer Ready Cornflake Chicken Fingers (making extra for freezer) with veg and leftover rice or whatever from Tue

    Fri – burgers with veg and chickpea fries -- they are so easy and surprisingly good (http://vegetablematter.blogspot.com/2010/02/panelle-chickpea-fries-with-dipping.html?m=1)

    I can't believe it will be May!

    MCV, I'm with you. A plan is good, and really helps on saving money. However we all change, I know I do. Sometimes, time gets in the way; other times, you just don't feel like what was planned.

    Having simple things in the feezer, soups, meals, things to be grilled, etc always help. Also, having things to change around.

    Last night I was having a big salad and rolls. Didn't feel like it.
    So, I had my spicy white bean, sausage, potato, and kale soup. Hearty. Also had a homemade roll (freezer)

    Tonight, salad, but made a quick olive tapenade over bruschette to go with the salad.

    Healthy and easy. But, I'm with you on planning ... it really does save.
