    Menu for Week of April 20 through April 26, 2013

    Hello all my menu friends!!! It's the weekend...woohoo!!! Now that I work so many hours, I've come to really appreciate the weekends!!! This one doesn't have much planned, which is great!!! Relaxation here I come!
    The coming week doesn't have that much either - calm before the storm I believe.

    As far as my menu goes, I didn't make one thing so it'll make another appearance on this week's menu. Here it is. Share yours!!

    Saturday - Moroccan Beef With Honey Spice Couscous - my boys love this!!

    Sunday - Quick & Delicious Pork Chile Verde with rice and salad

    Monday - Parmesan Chicken Fingers or Filets with corn and baked potatoes

    Tuesday - Cajun Ham Hash with salad and bread

    Wednesday - open for stretch room

    Thursday - Slow Cooker Lasagna - loosely based, with salad and bread

    Friday - out to eat or leftovers

    C - like the ham hash and the chili verde. Both sound good.

    I'm still dealing with NO stove/oven. The part came in - but wrong part. They re-ordered, another 5 days, unless I want to pay the FEDEX charge of 30.00. NO thanks. It's covered under warranty, so it only cost me $60, but, I'm usually on the bottom on the list for service calls.
    Still trying to use on hand items, and things that I can do on the grill, crock or micro. Believe me ... I can cook just about anything on the grill.

    Greens ... My garden is overflowing with lettuce; butter, red leaf, romaine, chard, bok choy, and a endive. Salads will be on the menu. I have some recipes picked out, but still deciding.

    My g/f I helped moved Fri - 1 more item; so, reuben sandwiches; chips; and home made refrigerator pickles - beer of course or margaritas
    Pot of vegetable soup (all for the freezer). Using a mix of all kinds of leftovers with ditallini pasta. Also, rolls in the ABM

    SUN ...
    Lady #4: 3 meals to be delivered Mon am
    Sloppy Joes; chopped salad, topped with black beans and corn
    Baked mac and cheese w/broccoli and ham; mixed melon salad
    BBQ chicken drumsticks; 5 bean salad; corn on the cob
    loaf of wheat bread; dinner rolls
    Me: Sloppy Joes; chopped salad topped with black beans and corn

    MON ...
    Ladies #1 and #2: Shrimp patties with peach salsa; baby red potatoes w/butter and parsley; coleslaw; lemon cake
    Me: Soup (freezer stash - kale white beans), salad (from the garden)

    TUES ...
    Shrimp patties with peach salsa; baby red potatoes w/butter and parsley; coleslaw

    WED ...
    Ladies #1: Classic Mushroom Swiss Burger; onion rings; spicy ketchup; 5 bean salad
    Ladies #2: Burger too, with caramelized onions, bacon, blue cheese
    Me: Leftovers - Chicken, sauteed w/mushrooms and onions with a light gravy; served over rice over rice; lima beans, broccoli, or salad (whatever is in the fridge)

    THURS ...
    Lady #3: surgery, so no cooking
    Me: Out with friends, not sure where

    FRI ...
    Ladies #1 and #2: Card/Game Night - Beef barley soup (requested); roasted vegetable sandwiches, the rest TBD
    Me: Friend over for movie night ... We may do pasta, soup, or maybe something grilled. Not sure.

    Breakfast: yogurt, cottage, or fruit
    Lunch: leftovers or a cup of soup
    And, don't forget to clean out your fridge, pantry, and freezer ... there is a meal waiting to be made!

    No stove/oven...kinda sounds like a fun challenge, actually! icon_smile.gif

    Wow. Ghost town around here.

    I had a hectic weekend and this week isn't much better but I still do have something of a plan (although it changes by the minute!).

    Sat – grilled chicken breast; pasta with tomatoes, herbs, and asiago; spinach salad

    Sun – leftover chicken with yellow squash in tomato sauce; whole wheat baguette with goat cheese

    Mon – Vegetable Biryani with rice (half went in the freezer)

    Tue – No-Guilt Creamy Salmon and Pasta with kale

    Wed - A Simple Chicken Satay with rice or quinoa and toasted almonds

    Thu – http://www.bestrecipes.com.au/recipe/gozleme-L12542.html gozlemes with veg and poached eggs (still have not managed to make this)

    Fri – grilled cheese? soup? I'll see what needs to be used up.

    I've noticed a lot of forums of quiet, not just here. My computer and connection is really good. But one day, at work I logged in and it crawled; and other sites were quick. But, food.com has got really slow with all the ads. And, I mean really slow. I may not want to post much if I had to deal with that.

    Maybe, just the time of year. I know Spring when I was up north was getting house cleaning done, putting winter stuff away; also, kids are busy in baseball etc.

    Just a thought.
