    I'm making a small herbed pork tenderloin tomarro.

    Been eating too many potato dishes, so they're out. What is light, but full of flavor as sides???

    We just took an ancho-rubbed tenderloin off the grill to rest, will be having a mango-jicama-chile-lime salsa, quinoa, and green beans with it.

    Rice looks good. I wonder if you could mix cooked rice and cooked quinoa?? This last time I made the Q, I really appreciated it totally rinsed and cooked properly!

    This might work well. Quinoa-Couscous "risotto"
    Be sure to rinse & toast the quinoa as mentioned in my review
