    can anyone tell me what half and half is. i'm from new zealand and have never heard of it.

    Half and half is a dairy product consisting of half light cream and half milk.

    Depending on the recipe, sometimes (whole) milk can be used or something richer like liquid whipping cream.
    Sometimes adding butter to milk, to increase the fat content of the milk, will do the trick.

    As mentioned, half-and-half is a blend of equal parts light (single) cream and whole milk, with a butterfat content of 10-12%.
