    Simple Spaghetti with a Creamy Vodka Fresh Spaghetti Sauce

    It was 9pm last night by the time I ate, so I didn't want anything too much. This is actually a light tomato sauce.

    I made in Jan with all my fresh grown tomatoes.
    It is a spin off this - http://www.recipezazz.com/recipe/easy---five-ingredient---15-minute-fresh-tomato-sauce-5748, I lightly pureed the tomatoes with my immersion blender, added vodka, then to finish it off - a little cream, just enough to lighten the sauce.

    I had a small container of this sauce in the freezer; along with a small baggie of spaghetti. I love to have some spaghetti in the freezer; quick thawing and perfect for a quick meal.

    I got some odd shadows, but it was 9pm, so ... I had to lighten it quite a bit. It turned out ok.

    The spaghetti looks delicious!! I am so bad when it is indoors for photo's but I think yours looks great with the lighting and clarity. Great job!! icon_biggrin.gif

    Thx, finally found 1 light, that after dark isn't too bad. Always is difficult inside.

    The sauce is very simple and light, so not too much ti shoot. I was happy the parm didn't white out on me.

    Thx Zurie, yes ... vodka is good!!
    The sauce is really light using fresh tomatoes vs canned. And anything is better with vodka, lol

    Thx Steve, it is a very simple sauce; and, easy to make. I use mine with fresh tomatoes so it is a bit lighter.

    Because it isn't heavy or too much cream, it freezes perfectly. Just toss with pasta for a nice light dinner. Meatless Monday, lol.

    I do try to have a few dinners like that. It's still pasta and cheese; but, without all the meat - it can be a bit lighter.

    Thx again, it really had some odd shadows, but came out good somehow.
