    Newbie "Fry Cook" Poster
    My kids love Don Pablo Queso Dip, any ideas how to make it.

    I haven't tried this, so I can't vouch for its authenticity: Don Pablo Queso Dip.

    I'd consider using Velveeta Cheese instead of a block of cheddar. Velveeta melts so smooth, while some cheddars separate and clump, especially if it's a cheaper brand or low fat. icon_smile.gif

    I LOVE a spicey chile con queso dip... I could eat it with a spoon.

    And speaking of queso dips... these are our favorite recipes:

    CHILE CON QUESO DIP RECIPE -

    Makes 4 cups.
    Ingredients:
    1 cup white cheddar cheese, grated
    1 (7 ounce) can green chilies, chopped and drained (or use 1 pickled jalapeno pepper)
    2 cups light sour cream
    1 teaspoon garlic powder
    1 cup monterey jack cheese, grated
    5 green onions, finely chopped
    1/4 cup fresh cilantro, finely chopped
    Directions:
    1 In a greased baking dish, layer half cheddar cheese and top with half of chopped green chiles, then half sour cream mixed with garlic powder.
    2 Cover with half of the Monterey Jack cheese. Repeat twice, using up all the ingredients.
    3 Bake in a preheated 375ºF. oven for 30 minutes, until the cheeses are melted and the center is set.
    4 Serve warm as a dip with tortilla chips. Mmmm -- delicious.

    CHORI-QUESO - QUESO CON CHORIZO DIP RECIPE -

    Makes 2 cups.
    1 (12 ounce) package mexican chorizo sausage, sausage
    1 (12 ounce) asadero cheese, shredded (or use Chihuahua or Monterey Jack cheese)
    1 green pepper, sliced thin
    1 bunch green onion, finely chopped
    1/2 cup fresh cilantro, finely chopped
    1 (8 ounce) package corn tortillas or 1 (8 ounce) package flour tortillas (if you prefer).
    Directions:
    1. Preheat oven to 300ºF. Remove the chorizo's case and heat it in a large skillet over medium-high heat until no longer pink, for about 6 to 7 minutes.
    2. Remove from heat and spoon off most of the fat. Slice cheese into 1-inch cubes and place half in a 2-quart casserole dish.
    3. Top with half the chorizo, the green peppers and remaining cheese. Top with remaining chorizo.
    4. Bake 15 to 20 minutes, until creamy and bubbly. Remove from oven.
    5. Top mixture with green onions and cilantro.
    6. Serve immediately using a spoon to serve on the tortillas. Mmmm -- delicious.

    SOUTHWESTERN CREAMY RANCH DIP - (Tostitos clone recipe) - 1 review -

    Makes 2 cups.
    1 (8 ounce) container light sour cream
    1/2 cup light mayonnaise
    1 (1 ounce) packet ranch dressing mix
    1 (10 ounce) can diced tomatoes and green chilies, well drained
    2 tablespoons fresh cilantro (about 6 sprigs)
    1 tablespoon lemon juice (from 1/2 of a lemon)
    Directions:
    1. In medium bowl, blend together sour cream, mayonnaise, ranch dressing mix and tomatoes and green chiles.
    2. Finely chop cilantro and stir into tomato mixture and squeeze the lemon juice into tomato mixture and mix well.
    3. Refrigerate until serving time and serve cold with tostitos.

    I also make another good one: QUICK & EASY QUESO DIP, by mixing in the blender these two ingredients: a 16 oz. jar of salsa with a 8 oz. block of softened cream cheese. That's it, you don't have to add any other ingredient and its taste is incredible delicious...!!!.

    Velveeta won't taste the same.

    white cheddar and velveeta are night and day. It may be good, but won't be the same at all.

    They have 2 queso dips. One that is orange, and the Queso Blanco (white)

    White one, they are both different.
    Neither has velveeta; but remember, their ingredients are commercial; so, you won't be able to get exactly what you like - but close.

    This is Don Pablo's queso blanco recipe, very similar to the one I posted above combining one cup each of white cheddar and Monterey Jack cheeses and sour cream; and this one includes one cup of any of the three white Mexican cheeses and cream cheese. icon_biggrin.gif

    DON PABLO'S QUESO BLANCO DIP -
    Ingredients:
    1 cup finely shredded cheese (Monterey Jack, Asadero or Chihuahua)
    4 oz. cream cheese - (1/2 of an 8 oz. pkg)
    4 oz fresh green chiles, chopped
    1/4 cup half & half - (more as needed)
    2 tbsp finely chopped onion
    2 tbsp finely chopped cilantro
    1 serrano pepper, finely chopped
    2 tsp cumin
    salt to taste
    Put all ingredients into a double boiler and cook over medioum heat until melted and well blended. Stir occasionally; more half & half may be added to create desired consistency.
